Overview
The Vernet confectioners, established in Morges since 1820, opened a branch in Bex, on the Place du Marché, around 1900, attracted by the rich clientele of the spa. The Bex confectionery was run by several generations of Vernet between 1900 and 1991. Today, only the inscription on the façade keeps the memory of it. The reputation of the Vernet house was based on its "religieuse", a cake made of puff pastry, almond paste and meringue egg white.
The dynasty of Vernet confectioners is now extinct, but the inhabitants of Bex and the tourists who have had the chance to taste it have succumbed to the delicacy, like the former Emperor of Ethiopia, Haile Selassie, who tasted a piece of "religieuse" on 28 June 1968.
